Barrel Aged

Our approach to whiskey is to lay down many different recipes in different types and sizes of barrels using both new and used cooperage. We lean heavily on our brewing background to incorporate interesting and delicious specialty malts and grains traditionally reserved for beer. In addition to our whiskies, we also have rum, gin, agave, and apple brandy aging. Barrels are ready when they are ready, and taste and aroma dictate bottlings, not age. You can look forward to small releases of various aged spirits throughout the year.


Each batch of South County Bourbon features a unique blend of specialty malts, grains and heirloom corn. It is then aged in charred American oak barrels for various lengths of time. Enjoy neat, on the rocks, or in your favorite bourbon cocktail.



Each batch of South County Rye features a unique blend of specialty malts, grains and heirloom rye and is aged in new, charred American oak barrels. Enjoy neat, in a classic cocktail, or experiment with ingredients that will highlight those specialty grains.


Barreled Rum

South County Barreled Rum begins with the finest grade of molasses. A hot fermentation with Caribbean rum yeast creates fruity flavors that further ripen with age in oak barrels. The result is a rich and mellow rum worthy of sipping over ice or in your favorite cocktail.


Spirit of CD

We distilled a batch of Grey Sail’s Captain’s Daughter Double IPA and aged it in freshly dumped South County Distillers Bourbon barrels to create this intriguing spirit. Enjoy neat or in your favorite whiskey cocktail.


Agave Reposado

South County Reposado is our Blanco Agave spirit aged in oak casks for many months. This extra time yields a mellow, straw colored spirit with hints of honey and vanilla. Sip neat or use in place of Blanco for a more complex twist on a classic cocktail.


Agave Anejo

South County Anejo is our Blanco Agave spirit aged in oak casks for a minimum of twelve months. This extended aging imparts a deep golden colored spirit with hints of caramel and toasted oak. Best savored neat or over a large ice cube.


Barrel Rested Gin

Our rested Gin combines spirit distilled from 100% malt with juniper berries, dried cranberries and cherries, roasted nuts, savory herbs and sweet citrus zest and rested for several months in used casks. Perfect for sipping or substituted in classic whiskey and gin drinks.
